Background

You’ll find this kind of pizza all over southern Italy, but especially in Calabria and Campania. It’s that late-night, post-shift pizza — the one you make when there’s leftover sausage, half a bottle of red, and a few potatoes rolling around in the kitchen.

Giovanni says every family has their own version. Some fry the potatoes in olive oil until they shatter, others roast them with rosemary and garlic. The sausage hits the pan, a splash of wine lifts all the flavour, and suddenly you’ve got a topping that smells like Sunday lunch and chaos.

It’s rustic, filling, and way too good to share. The kind of pizza that makes you question every time you’ve ever said “less is more.”

Method

  1. Slice the sausage into pieces and fry in a pan until browned. Deglaze with a splash of good Italian white wine and let it cook down until the pan is glossy and fragrant.
  2. Dice the potatoes and pan-fry them with rosemary until golden and crisp. Season with salt and set aside.
  3. Preheat your oven to 250°C on bake or convection mode with no fan force. If you are using a pizza stone, place it in now to preheat fully.
  4. Open your Based Pizza base and top with sliced mozzarella, the crispy potatoes, and the cooked sausage. Drizzle lightly with olive oil.
  5. Bake for 5–6 minutes, or until the cheese has melted and the crust is golden.
  6. Finish with a few fresh basil leaves, a final drizzle of olive oil, and a quiet moment to appreciate what you’ve just done.

• 1 Based Pizza sourdough base
• 1 Italian pork sausage, sliced
• 1 medium potato, thinly sliced
• 1 tbsp olive oil (plus extra for finishing)
• 1 sprig rosemary
• 60 ml white wine (optional, for deglazing)
• 100 g mozzarella, sliced
• A few fresh basil leaves
• Salt, to taste

Start by setting your conventional oven to bake mode, avoiding fan-forced. Preheat to maximum, typically 250°C to 280°C, and wait until fully heated. For gas or wood-fired ovens, preheat to 320°C for that signature wood-fired blistered finish.
